Ingredients
  • ⅓ CUP SHORTENING
  • 1 CUP FLOUR
  • ⅓ TEASPOON SALT
  • 2 TABLESPOONS COLD WATER
Instructions
  1. Cut shortening into flour and salt until particles are the size of small peas.
  2. Sprinkle in water, tossing with fork until all flour is moistened and pastry cleans side of bowl.
  3. Gather pastry into ball; shape into flattened round on floured board.
  4. Place in pie pan and trim overhang.

  • INGREDIENTS:
  • -3 OZ CREAM CHEESE (SOFTENED)
  • ½ CUP FIRMLY PACKED
  • 1 CUP OLEO BROWN SUGAR
  • CUPS FLOUR
  • LARGE EGGS BEATEN
  • DASH OF SALT
  • 1 TEASPOON VANILLA
  • 2 TABLESPOONS MELTED BUTTER
  • DASH OF SALT
  • 1 CUP TULAROSA PECAN COMPANY’ PECANS (SMALL PIECES)
Instructions
  1. PREHEAT OVEN TO 35O
  2. CRUST:
  3. CREAM TOGETHER CREAM CHEESE AND OLEO.
  4. ADD FLOUR AND SALT,
  5. BLEND UNTIL SMOOTH,
  6. YOU MAY NEED ½ CUP MORE FLOUR.
  7. USE ABOUT 1 TBSP. OF DOUGH AND ROLL INTO BALL;
  8. PRESS INTO MINI-MUFFIN PANS.
  9. FILLING:
  10. BLEND ALL INGREDIENTS TOGETHER.
  11. POUR INTO MUFFIN PANS; BE CAREFUL NOT TO OVERFILL.
  12. BAKE 18 MINUTES AT 350, REDUCE TO 250 AND BAKE 5-8 MINUTES, OR UNTIL LIGHTLY BROWN.
  13. LET COOL COMPLETELY, POP OUT WITH SPOON OR BUTTER KNIFE.
  14. YIELDS 3-4 DOZEN

  • 13oz. pkg cream cheese
  • ⅓ cup mayonnaise
  • ⅓ cup orange juice
  • 1 T. lemon juice
  • 1 T. sugar
  • ¼ t. salt
  • ⅓ cup chopped pecans
Instructions
  1. Soften cream cheese.
  2. Add remaining ingredients except pecans.
  3. Beat until well blended.
  4. Stir in pecans.
  5. Chill well.
  6. Serve with fruit or crisp salad greens.
  7. Yield: 1⅓ cups

  • 2 cups brown sugar, firmly packed
  • ¼ cup water
  • ¼ cup evaporated milk
  • 2 cups pecan pieces and halves
  • 2 teaspoons vanilla
  • 3 tablespoons chilled butter, cut in pieces
Instructions
  1. Combine sugar, milk, and water in a 2-quart saucepan.
  2. heat to boiling stirring constantly.
  3. Cook until mixture reaches soft ball consistency (235°).
  4. Remove from heat.
  5. Stir in pecans, vanilla, and butter.
  6. Immediately drop by tablespoons onto wax paper.

  • 3 eggs
  • ⅔ cup sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • ⅓ cup margarine
  • 1 cup corn syrup
  • 1 cup pecans
Instructions
  1. Heat oven to 375 degrees.
  2. Prepare pastry.
  3. Beat eggs, sugar, salt, margarine and syrup with hand beater.
  4. Stir in pecans.
  5. Pour into pastry.
  6. Bake until set - 40 to 50 minutes.
  7. Cool.

Caramel Pecan Pie

36 CARAMELS
1/4 CUP WATER
1/4 CUP BUTTER, CUBED
3 EGGS
3/4 CUP SUGAR
1 TEASPOON VANILLA
1/8 TEASPOON SALT
1 & 1/3 CUPS CHOPPED PECANS, TOASTED
1 UNBAKED DEEP-DISH PIE SHELL (9 INCH)

In small heavy saucepan, combine caramels, water and butter. Cook and stir over low heat until caramels are melted. Remove from heat and set aside. In small mixing bowl, beat eggs, sugar, vanilla and salt until smooth. Gradually add caramel mixture. Stir in chopped pecans. Pour into pastry shell. Bake at 350 degrees for 35 to 40 minutes or until set. Cool on wire rack.

Barbecued Pecans

Ingredients:

* 2 tablespoons butter
* 1/4 cup Worcestershire sauce
* 1 tablespoon ketchup
* 2 dashes hot sauce
* 4 cups pecan halves

Preparation:
Melt butter in large saucepan or skillet. Add Worcestershire sauce, ketchup and hot sauce. Add pecan halves, stirring to coat well. Spoon into a lightly greased glass or nonstick baking dish; spread out in an even layer. Toast at 400° about 15 to 20 minutes, stirring frequently. Turn out on paper towels and sprinkle with salt.

Pecan Grahams

Place grahams on cookie sheet
½ Cup Brown Sugar
¾ Cup butter
Boil 2 minutes
Pour over grahams
Scatter pecan pieces over all
Bake 8-10 minutes in 350 deg oven
